Ingredients

  • 3 Tbsp. butter
  • 5 Tbsp. brown sugar
  • 3 slices pineapple, cut in halves
  • 1 lb. lean smoked ham (ground)
  • 8 oz. lean fresh pork (ground)
  • 1/2 c. bread crumbs
  • 1/4 tsp. pepper
  • 2 eggs, beaten
  • 1/4 c. milk

Method

  • Melt butter in 5 x 9-inch loaf pan.
  • Add brown sugar.
  • Cook until sugar dissolves, stirring constantly.
  • Arrange pineapple in pan.
  • Cook over low heat for 5 minutes.
  • Combine ham, pork, bread crumbs, pepper, eggs and milk in bowl; mix well.
  • Spread over pineapple; press down.
  • Bake at 350° for 1 hour.
  • Invert onto serving plate.
  • Serve with whipped cream, flavored with horseradish to taste.
