Ingredients
- 3 Tbsp. butter
- 5 Tbsp. brown sugar
- 3 slices pineapple, cut in halves
- 1 lb. lean smoked ham (ground)
- 8 oz. lean fresh pork (ground)
- 1/2 c. bread crumbs
- 1/4 tsp. pepper
- 2 eggs, beaten
- 1/4 c. milk
Method
- Melt butter in 5 x 9-inch loaf pan.
- Add brown sugar.
- Cook until sugar dissolves, stirring constantly.
- Arrange pineapple in pan.
- Cook over low heat for 5 minutes.
- Combine ham, pork, bread crumbs, pepper, eggs and milk in bowl; mix well.
- Spread over pineapple; press down.
- Bake at 350° for 1 hour.
- Invert onto serving plate.
- Serve with whipped cream, flavored with horseradish to taste.
