Ingredients
- 8 eggs
- 6 red firm peppers
- 6 Tbsp. olive oil
- 1 clove chopped garlic
- 1 1/2 lb. Italian sausage bulko
- salt and pepper to taste
Method
- Cut peppers lengthwise after cleaned and seeded.
- Heat oil in large frying pan and add peppers and garlic.
- Add sausage when hot and cook meat and peppers until brown.
- Lower heat, cover pan and saute slowly for 10 minutes.
- Beat eggs.
- Fold in beaten eggs. Stir gently until eggs are cooked to your desire.
- Good on Italian bread or rolls.
- Serves many.
