Ingredients
- bunch spinach leaves
- 3 eggs beaten
- dash olive oil
- pinch salt (optional)
- 50 grams cheese cubed
Method
- Wash shred and blanch spinach leaves in boiling water
- Beat eggs and add the spinach leaves once drained
- Add cubes of cheese and salt if you are using it.
- Heat oil in a non adherent pan.
- Add egg mixture.
- Cook
- Fold over slowly so that omelette doesn't fall apart
- When all the eggs are cooked through and a bit golden outside ready to enjoy with whatever you choose, salad, pickles...
