Ingredients

  • bunch spinach leaves
  • 3 eggs beaten
  • dash olive oil
  • pinch salt (optional)
  • 50 grams cheese cubed

Method

  • Wash shred and blanch spinach leaves in boiling water
  • Beat eggs and add the spinach leaves once drained
  • Add cubes of cheese and salt if you are using it.
  • Heat oil in a non adherent pan.
  • Add egg mixture.
  • Cook
  • Fold over slowly so that omelette doesn't fall apart
  • When all the eggs are cooked through and a bit golden outside ready to enjoy with whatever you choose, salad, pickles...
