Ingredients

  • For Dressing:
  • 1/2 c. olive oil
  • 2-4 cloves garlic
  • 2 Tbls. lemon juice
  • 1 Tbls. worchester sauce
  • 1/2 t. salt
  • 1/4 t. pepper
  • 1 egg (or equivalent egg product)
  • 4 anchovie filets
  • For Chicken:
  • 6-8 chicken breasts, pounded
  • Poultry seasoning, like Paul Prudhomme's or Joe's Stuff
  • Oil for cooking
  • Romaine Lettuce
  • Parmesan Cheese
  • Croutons

Method

  • Finely chop garlic and anchovies. Mix in lemon juice, worchester sauce, egg product, salt and pepper.
  • Wisk in olive oil.
  • Dust chicken with seasoning and saute or grill. Slice chicken and set aside.
  • Wash, dry and tear romaine. Add dressing (reserve some to drizzle at end) to taste, croutons and parmesan cheese. Divide among plates. Place chicken on top of salad. Drizzle with dressing. Serve.
