Ingredients

  • 2 cups diced plum tomato
  • 1 cup diced green tomato
  • 1/2 cup diced green pepper
  • 1/4 cup diced purple onion
  • 1 tablespoon seeded, minced serrano chile
  • 1 tablespoon chopped fresh cilantro
  • 2 tablespoons fresh lime juice
  • 1 tablespoon olive oil
  • 1 teaspoon sugar
  • 1/2 teaspoon salt
  • 1/4 teaspoon coarsely ground pepper
  • 1 clove garlic, minced

Method

  • Combine all ingredients in a medium bowl; stir well. Cover and chill at least 3 hours. Serve with chicken or fish or as a dip with no-oil baked tortilla chips.
