- 2 cups diced plum tomato
- 1 cup diced green tomato
- 1/2 cup diced green pepper
- 1/4 cup diced purple onion
- 1 tablespoon seeded, minced serrano chile
- 1 tablespoon chopped fresh cilantro
- 2 tablespoons fresh lime juice
- 1 tablespoon olive oil
- 1 teaspoon sugar
- 1/2 teaspoon salt
- 1/4 teaspoon coarsely ground pepper
- 1 clove garlic, minced
Method
- Combine all ingredients in a medium bowl; stir well. Cover and chill at least 3 hours. Serve with chicken or fish or as a dip with no-oil baked tortilla chips.
