Ingredients

  • 1 garlic clove, peeled
  • 1 10-ounce package frozen chopped spinach, thawed, drained, squeezed dry
  • 8 ounces soft fresh goat cheese (such as Montrachet)
  • 6 tablespoons crumbled feta cheese (about 2 ounces)
  • 2 teaspoons chopped fresh mint
  • 1 teaspoon grated lemon peel

Method

  • With machine running, drop garlic through feed tube of processor and finely chop.
  • Add all remaining ingredients and process until well blended and almost smooth.
  • Season to taste with salt and pepper.
  • Transfer spread to bowl.
  • (Can be prepared 2 days ahead.
  • Cover and refrigerate.
  • Let stand at room temperature 1 hour before serving.)
