Ingredients
- 1 garlic clove, peeled
- 1 10-ounce package frozen chopped spinach, thawed, drained, squeezed dry
- 8 ounces soft fresh goat cheese (such as Montrachet)
- 6 tablespoons crumbled feta cheese (about 2 ounces)
- 2 teaspoons chopped fresh mint
- 1 teaspoon grated lemon peel
Method
- With machine running, drop garlic through feed tube of processor and finely chop.
- Add all remaining ingredients and process until well blended and almost smooth.
- Season to taste with salt and pepper.
- Transfer spread to bowl.
- (Can be prepared 2 days ahead.
- Cover and refrigerate.
- Let stand at room temperature 1 hour before serving.)
