Ingredients

  • 6 to 8 oz. linguini or any other favorite pasta
  • 2 large garlic cloves, minced
  • 1 tsp. dried oregano, crushed
  • 2 Tbsp. butter
  • 1 fresh medium tomato, chopped
  • 1/2 c. heavy cream
  • 1 c. crabmeat, shrimp or fish
  • 1/2 c. sliced green onions
  • 1/4 c. crumbled Blue cheese or shredded Swiss cheese
  • 1/4 c. grated Parmesan or Romano cheese

Method

  • Cook pasta according to package directions; drain.
  • While pasta is cooking, cook garlic and oregano in butter in a saucepan, stirring frequently, for about 1 minute.
  • Add chopped tomato and continue cooking, stirring occasionally, for 3 minutes or until tomato is cooked through.
  • Add remaining ingredients.
  • Mix well. Cook over medium heat, stirring frequently, until Blue cheese is melted and sauce is hot.
  • Place hot-cooked pasta on a serving dish and top with sauce.
  • Yields 3 to 4 servings.
