- 2 lb. ground turkey
- 1 large onion, finely chopped
- 3 large stalks celery, finely chopped
- 1 large green apple
- 8 slices whole wheat bread, coarsely crumbled or cubed
- 2 tsp. poultry seasoning
- 1/4 tsp. freshly ground pepper
- 1 tsp. light salt
- 1/2 tsp. marjoram
- 1 tsp. sage
- 1 tsp. thyme
- 4 Tbsp. chopped celery
- 4 eggs
- 1/2 c. low-cal cranberry juice
Method
- Mix all ingredients together.
- Divide into 2 (3-quart) casseroles or loaf pans (sprayed).
- Bake for 1 1/2 to 2 hours at 350°.
- Test for doneness by pricking center of loaf.
- When juices run clear rather than pink, turkey is done.
