Ingredients

  • 2 lb. ground turkey
  • 1 large onion, finely chopped
  • 3 large stalks celery, finely chopped
  • 1 large green apple
  • 8 slices whole wheat bread, coarsely crumbled or cubed
  • 2 tsp. poultry seasoning
  • 1/4 tsp. freshly ground pepper
  • 1 tsp. light salt
  • 1/2 tsp. marjoram
  • 1 tsp. sage
  • 1 tsp. thyme
  • 4 Tbsp. chopped celery
  • 4 eggs
  • 1/2 c. low-cal cranberry juice

Method

  • Mix all ingredients together.
  • Divide into 2 (3-quart) casseroles or loaf pans (sprayed).
  • Bake for 1 1/2 to 2 hours at 350°.
  • Test for doneness by pricking center of loaf.
  • When juices run clear rather than pink, turkey is done.
