Ingredients

  • 2 c. cooked zucchini squash, salted and mashed
  • 1 (8 oz.) carton sour cream
  • 1 c. chopped onoin (I use green onions)
  • 1 can creamed chicken soup
  • 1 box (Stove Top) stuffing mix
  • 1 stick melted oleo
  • grated cheese

Method

  • Mix stuffing mix with melted oleo.
  • Press 1/2 of the mix into casserole dish for the crust.
  • Spread the squash on crust.
  • Mix sour cream, onion and cream of chicken soup.
  • Spread over the squash.
  • Add the rest of the stuffing mix.
  • Spread with cheese. Bake at 350° for 30 minutes.
