Ingredients

  • 1 whole-wheat pita pocket
  • Fresh white meat turkey, as needed
  • 1 teaspoon cranberry sauce
  • Sliced avocado, as desired
  • 2 slices of tomato
  • 2 leaves Romaine lettuce
  • 1 leaf radicchio
  • 4 pieces of Mandarin oranges
  • Slivered almonds to taste
  • 1 teaspoon olive oil
  • Dash of salt and pepper
  • 1/4 teaspoon Balsamic vinegar
  • 1 teaspoon grated carrots
  • Sprinkle of parmesan cheese
  • 1/4 teaspoon honey mustard

Method

  • In a small bowl mix olive oil, vinegar, honey mustard and salt and pepper. Cut pita in half to form two pockets and tightly toast each side. Drizzle olive oil and vinegar mixture inside each pita half and then fill with turkey, cranberry sauce, avocado, tomato, lettuce, radicchio, oranges and grated carrots. Top with slivered almonds and a sprinkle of parmesan cheese.
