Ingredients

  • 1 turkey carcass
  • 4 qt. water
  • 6 small potatoes, diced
  • 4 large carrots, diced
  • 1 large onion, diced
  • 1 1/2 c. shredded cabbage
  • 1 (7 oz.) can drained tomatoes, sliced (optional)
  • 1/2 c. uncooked barley
  • 1 Tbsp. Worcestershire sauce
  • 1 1/2 tsp. salt
  • 1 tsp. dried parsley
  • 1 tsp. basil
  • 1 bay leaf
  • 1/4 tsp. pepper
  • 1/4 tsp. paprika
  • 1/4 tsp. poultry seasoning
  • pinch of thyme

Method

  • Bring carcass to a boil in large pot; then simmer for 2 hours. Take

  • out
  • of
  • water and remove meat.
  • Return meat to pot
  • and
  • add
  • remaining ingredients.
  • Simmer 1 hour. Yields 5 quarts.
