Ingredients
- 2 Tbsp. olive oil
- 1 c. chopped onion
- 1 large clove garlic, minced
- 1 3/4 c. Contadina diced tomatoes
- 1 (6 oz.) can tomato paste
- 1 c. chicken broth
- 1 c. chopped zucchini
- 1/2 c. sliced olives (green and black)
- 2 Tbsp. capers
- 1 lb. pasta
Method
- Cook pasta according to package directions.
- Heat oil; saute onion and garlic for 1 minute.
- Add remaining ingredients.
- Simmer uncovered for 20 minutes.
- Serve over your favorite pasta.
