Ingredients

  • 2 large leaves leaf lettuce
  • 1 (3 1/4 oz.) can Star-Kist tuna, drained and broken into small chunks
  • 1/2 c. shredded red cabbage
  • 1/4 c. shredded zucchini
  • 1/4 c. alfalfa sprouts
  • 1 Tbsp. reduced calorie Thousand Island or Blue cheese dressing
  • pepper to taste
  • 2 red or green bell pepper rings

Method

  • Trim stalks from lettuce leaves.
  • In a small bowl, toss together tuna, cabbage, zucchini and sprouts.
  • Stir in dressing; season to taste with pepper.
  • Spoon 1/2 of the salad mixture in center of each leaf.
  • Roll up leaves, enclosing filling.
  • Secure lettuce bundles by slipping a bell pepper ring over each.
  • Place bundles seam side down on plate.
  • Makes 1 serving.
