Ingredients
- 1 can (7 ounce.) tuna
- 3 tbsp. flour
- 2 tbsp. butter
- 1 teaspoon lemon juice
- 1/2 c. lowfat milk
- 1 c. bread crumbs
- 1 egg, slightly beaten
Method
- Drain tuna and flake.
- Fold in lemon juice.
- Heat butter and blend in flour to make a thick white sauce.
- Add in to tuna mix.
- Mix well.
- Refrigerateone hour or possibly longer.
- Shape into croquettes.
- Place croquettes in egg then bread crumbs, repeat once more.
- Place on plate.
- Refrigerate1/2 to 3/4 hour.
- Fry in deep fat till golden.
- Make medium white sauce (with a lot of cheese).
- Pour over cooked croquettes.
- Makes 4 to 6.
