Ingredients

  • 1 can (7 ounce.) tuna
  • 3 tbsp. flour
  • 2 tbsp. butter
  • 1 teaspoon lemon juice
  • 1/2 c. lowfat milk
  • 1 c. bread crumbs
  • 1 egg, slightly beaten

Method

  • Drain tuna and flake.
  • Fold in lemon juice.
  • Heat butter and blend in flour to make a thick white sauce.
  • Add in to tuna mix.
  • Mix well.
  • Refrigerateone hour or possibly longer.
  • Shape into croquettes.
  • Place croquettes in egg then bread crumbs, repeat once more.
  • Place on plate.
  • Refrigerate1/2 to 3/4 hour.
  • Fry in deep fat till golden.
  • Make medium white sauce (with a lot of cheese).
  • Pour over cooked croquettes.
  • Makes 4 to 6.
