Ingredients

  • 4 summer squash
  • 2 cups orange marmalade
  • 1 cup shredded coconut
  • 2 cups mandarin oranges
  • 5 large carrots, shredded
  • 2 cups crushed walnuts
  • 1 cup olive oil
  • 1 cup heavy whipping cream
  • 1 cup orange juice
  • 1 tablespoon rosemary
  • 1 tablespoon cinnamon
  • 2 tablespoons sugar
  • 1 tablespoon salt
  • 2 tablespoons poppy seeds
  • 1 tablespoon black pepper
  • 1 tablespoon paprika

Method

  • Slice squash into 1/4 inch"wheels," and toss together with marmelade, coconut, oranges, carrots, and walnuts.
  • For the dressing, whip olive oil, cream, and orange juice together for 2-3 minutes.
  • Mix all seasonings together in a small bowl and add to the dressing.
  • Chill salad and dressing.
  • Toss dressing with the salad right before serving.
  • May garnish with more walnuts, if desired.
