Ingredients

  • 1/2 c. plain low-fat yogurt
  • 4 tsp. reduced-calorie mayonnaise
  • 1 1/2 tsp. Dijon-style mustard
  • 1 tsp. lemon juice
  • 2 small apples, cored and chopped
  • 1/2 c. chopped green onion
  • 1/2 c. chopped celery
  • 4 oz. canned tuna, flaked
  • 4 c. shredded lettuce

Method

  • In large bowl, combine first 4 ingredients.
  • Add apples, onion, celery and tuna.
  • Toss until well mixed.
  • Chill 4 hours or more before serving.
  • Serve on bed of lettuce.
  • Divide evenly. Makes 2 servings.
  • Each serving provides: 1/2 milk exchange, 1 fat exchange, 1 fruit exchange, 5 vegetable exchanges and 2 protein exchanges.
