Ingredients
- 1/2 c. plain low-fat yogurt
- 4 tsp. reduced-calorie mayonnaise
- 1 1/2 tsp. Dijon-style mustard
- 1 tsp. lemon juice
- 2 small apples, cored and chopped
- 1/2 c. chopped green onion
- 1/2 c. chopped celery
- 4 oz. canned tuna, flaked
- 4 c. shredded lettuce
Method
- In large bowl, combine first 4 ingredients.
- Add apples, onion, celery and tuna.
- Toss until well mixed.
- Chill 4 hours or more before serving.
- Serve on bed of lettuce.
- Divide evenly. Makes 2 servings.
- Each serving provides: 1/2 milk exchange, 1 fat exchange, 1 fruit exchange, 5 vegetable exchanges and 2 protein exchanges.
