Ingredients

  • 1 Bag Mixed Greens
  • 1/4 small Red Onion
  • 1/2 Banana
  • 6 large sliced Strawberries
  • 1/8 cup diced Melon
  • Balsamic Vinegar
  • Sweet Balsamic Glaze*
  • 1/8 Cup Crumbled Blue Cheese
  • Handful Nuts (Walnuts or Pistachios)**
  • Blackened Seasoning (or Emeril's Essence)
  • 12 Large Scallops or Shrimp
  • Olive Oil

Method

  • Rinse and pat dry shellfish, dredge one side in spices, set aside. Thinly slice red onion, dice fruit to desired size, set aside. (do not refrigerate)
  • Place nuts on cookie sheet and toast under broiler until just brown, shaking periodically (watch closely!)
  • Add olive oil to a griddle or non stick pan and set to medium high heat, sear scallops/shrimp for 2-3 minutes, turn down heat to med and turn once. Cook until just firm.
  • Arrange greens on 2 plates; evenly sprinkle with red onion, fruit, nuts, and blue cheese. Lightly drizzle with balsamic, then with sweet balsamic, top each salad with 6 with seared shellfish and serve
