Ingredients
- 3/4 c. brown sugar
- 1/2 c. vegetable oil
- 3 eggs
- 3 smashed bananas
- 1 c. yogurt
- 1 1/2 c. flour
- 2 tsp. baking powder
- 1 tsp. cinnamon
- 1/2 tsp. salt
- 1 c. coconut
- 20 oz. can crushed pineapple, drained
Method
- Combine the brown sugar, oil, eggs, bananas and yogurt; mix well.
- Sift the flour, baking powder, cinnamon and salt.
- Stir into first mixture.
- Add the coconut and pineapple and stir.
- Pour into a greased 9 x 13-inch pan and bake at 350° for 35 minutes.
