- 3 eggs
- 2/3 c. white sugar
- 1 c. light brown sugar (firmly packed)
- 2 Tbsp. melted butter
- 1 tsp. vanilla
- 2/3 c. quick cooking rolled oats
- 2/3 c. flaked coconut
- 1 c. raisins (I prefer white)
- 1 (8 1/4 oz.) can crushed pineapple (undrained)
- 1 unbaked 9-inch pie shell
Method
- Beat eggs until lemon colored.
- Gradually add sugars, beating well.
- Blend in butter and vanilla.
- Stir in oats, coconut, raisins and undrained pineapple.
- Pour into pie shell.
- Bake in 350°
- oven for 50 minutes or until filling is set.
- Cool on rack. Makes 6 to 8 servings.
