Ingredients

  • 3 eggs
  • 2/3 c. white sugar
  • 1 c. light brown sugar (firmly packed)
  • 2 Tbsp. melted butter
  • 1 tsp. vanilla
  • 2/3 c. quick cooking rolled oats
  • 2/3 c. flaked coconut
  • 1 c. raisins (I prefer white)
  • 1 (8 1/4 oz.) can crushed pineapple (undrained)
  • 1 unbaked 9-inch pie shell

Method

  • Beat eggs until lemon colored.
  • Gradually add sugars, beating well.
  • Blend in butter and vanilla.
  • Stir in oats, coconut, raisins and undrained pineapple.
  • Pour into pie shell.
  • Bake in 350°
  • oven for 50 minutes or until filling is set.
  • Cool on rack. Makes 6 to 8 servings.
