Ingredients

  • 1 egg white, at room temperature
  • 1 c. light brown sugar
  • 1 level Tbsp. flour
  • 3/4 c. chopped pecans
  • pinch of salt

Method

  • Preheat oven to 350°.
  • Grease baking sheet well.
  • Beat egg white until stiff peaks form; gradually add brown sugar, a tablespoon at a time, beating well after each addition.
  • Beat in salt and flour.
  • Stir in chopped pecans.
  • Drop batter by teaspoonful 2 inches apart on baking sheet.
  • Bake approximately 15 minutes.
  • Cool slightly; remove from pan.
  • May be doubled.
  • They will melt in your mouth.
