- 3 cloves garlic, minced
- 1 onion, chopped
- 1 Tbsp. oil
- 4 cans chicken broth
- 1 can (or 2 c.) corn
- 1 can diced green chiles
- 1 1/2 c. cooked chicken
- 2 carrots, diced
- juice of 1 lime
- 2 tsp. chili powder (adjust to taste - tabasco sauce may also be substituted)
- shredded cheddar cheese
- tortilla chips
- diced avocado
Method
- Saute garlic and onion in oil until translucent.
- Add broth, corn, chiles, chicken, and carrots.
- Bring to a low boil; simmer, stirring occasionally.
- Add lime juice and chili powder; stir and simmer until heated through.
- Salt to taste.
