Ingredients

  • 3 cloves garlic, minced
  • 1 onion, chopped
  • 1 Tbsp. oil
  • 4 cans chicken broth
  • 1 can (or 2 c.) corn
  • 1 can diced green chiles
  • 1 1/2 c. cooked chicken
  • 2 carrots, diced
  • juice of 1 lime
  • 2 tsp. chili powder (adjust to taste - tabasco sauce may also be substituted)
  • shredded cheddar cheese
  • tortilla chips
  • diced avocado

Method

  • Saute garlic and onion in oil until translucent.
  • Add broth, corn, chiles, chicken, and carrots.
  • Bring to a low boil; simmer, stirring occasionally.
  • Add lime juice and chili powder; stir and simmer until heated through.
  • Salt to taste.
