Ingredients

  • 6 c. chicken broth
  • 1 c. water
  • 1 tsp. minced garlic
  • 3 green onions, sliced
  • 3 Tbsp. fresh cilantro, chopped
  • salt to taste
  • 3 avocados, diced
  • 1 doz. corn tortillas, cut into strips
  • 1 (15 oz.) can pinto beans
  • 2 c. grated Cheddar cheese

Method

  • Bring chicken broth and water to a slow simmer.
  • Add garlic, green onion, cilantro and salt.
  • Simmer gently.
  • Meanwhile, prepare and place into separate bowls, avocados, tortillas, beans and cheese.
  • After broth has simmered for 20 minutes, the meal is ready to serve.
  • Ladle broth into bowls and let your guests add the ingredients they prefer.
