- 6 c. chicken broth
- 1 c. water
- 1 tsp. minced garlic
- 3 green onions, sliced
- 3 Tbsp. fresh cilantro, chopped
- salt to taste
- 3 avocados, diced
- 1 doz. corn tortillas, cut into strips
- 1 (15 oz.) can pinto beans
- 2 c. grated Cheddar cheese
Method
- Bring chicken broth and water to a slow simmer.
- Add garlic, green onion, cilantro and salt.
- Simmer gently.
- Meanwhile, prepare and place into separate bowls, avocados, tortillas, beans and cheese.
- After broth has simmered for 20 minutes, the meal is ready to serve.
- Ladle broth into bowls and let your guests add the ingredients they prefer.
