Ingredients

  • 3 c. water
  • 1 (7 1/2 oz.) can tomatoes, cut up
  • 1 Tbsp. instant beef bouillon granules
  • 1/2 tsp. dried basil, crushed
  • 1 c. loose-pack frozen broccoli, cauliflower and carrots
  • 1/2 c. frozen cheese tortellini
  • 1 Tbsp. snipped parsley

Method

  • In medium saucepan, combine the water, undrained tomatoes, bouillon, basil and oregano.
  • Bring to boiling.
  • Stir in frozen vegetables and tortellini.
  • Return to boiling.
  • Reduce heat. Simmer, uncovered, for 7 minutes or until tortellini are tender. Stir in parsley.
  • Makes 4 servings.
