Ingredients

  • 1 big eggplant
  • 2 whole eggs, beaten
  • 1/2 cup ground meat
  • 1 medium white onion,chopped
  • 1 medium tomato,chopped
  • 3 clove of crushed garlic
  • 1 salt to taste
  • 1 ground black pepper (if desired)
  • 1 dash of thyme
  • 1 canola oil

Method

  • Grill eggplant until the skin is burned black.
  • Peel the burned skin.
  • Use a fork to smash the eggplant on a plate.
  • Set aside.
  • Heat pan on medium fire and pour canola oil.
  • Fry crushed garlic and ground meat, season with salt and ground black pepper.
  • Pour onions and tomatoes.
  • Simmer for a few minutes and set aside.
  • Season beaten eggs with salt and whisk.
  • Put smashed eggplant in an oval bowl and pour beaten eggs, fried ground meat with onions and tomato.
  • Using the same pan, reheat on medium fire and add a little canola oil.
  • Pour the eggplant mix.
  • Season with thyme and flip when the bottom is cooked.Serve with your favorite condiments and drinks
