Ingredients
- 1 big eggplant
- 2 whole eggs, beaten
- 1/2 cup ground meat
- 1 medium white onion,chopped
- 1 medium tomato,chopped
- 3 clove of crushed garlic
- 1 salt to taste
- 1 ground black pepper (if desired)
- 1 dash of thyme
- 1 canola oil
Method
- Grill eggplant until the skin is burned black.
- Peel the burned skin.
- Use a fork to smash the eggplant on a plate.
- Set aside.
- Heat pan on medium fire and pour canola oil.
- Fry crushed garlic and ground meat, season with salt and ground black pepper.
- Pour onions and tomatoes.
- Simmer for a few minutes and set aside.
- Season beaten eggs with salt and whisk.
- Put smashed eggplant in an oval bowl and pour beaten eggs, fried ground meat with onions and tomato.
- Using the same pan, reheat on medium fire and add a little canola oil.
- Pour the eggplant mix.
- Season with thyme and flip when the bottom is cooked.Serve with your favorite condiments and drinks
