Ingredients

  • FOR THE SALAD:
  • 4 whole Tomatoes, Cut Into Large Bite Size Pieces
  • 2 cups Chopped Watermelon
  • 1/2 cups Feta Cheese
  • 1/4 cups Diced Red Onion
  • FOR THE DRESSING:
  • 3 Tablespoons Olive Oil
  • 1 Tablespoon Lemon Juice
  • 2 Tablespoons Chopped Mixed Herbs (basil, Mint, Parsley)
  • 1/2 teaspoons Kosher Salt

Method

  • Combine the tomatoes, watermelon, feta cheese and red onion in a medium bowl.
  • For the dressing, in a small bowl, whisk together the olive oil, lemon juice, herbs and kosher salt. Pour over the tomato mixture and stir gently to combine.
  • Note: If you want a little kick, add 2 tablespoons diced jalapeno pepper.
