- 2 tomatoes, chopped
- 12 lb canned tuna, good quality, drained and separated into large flakes
- 12 cup extra virgin olive oil
- 14 cup red onion, minced
- 2 teaspoons capers
- 2 garlic cloves, minced
- salt, to taste
- white wine vinegar, to taste
- 12 fresh basil leaves, torn into small pieces
- 1 (5 ounce) bag mixed salad greens
- 2 hard-boiled eggs, peeled and cut
- 12 black olives, mediterranean style
Method
- In a bowl, combine all ingredients.
- Toss and serve.
