Ingredients
- 8 oz can boneless sardines
- 4 None medium tomatoes, finely diced
- 1/2 None small red onion, finely chopped
- 2 oz pitted kalamata olives, sliced
- 2 tbsp chopped basil, plus extra leaves to serve
- 8 slices crusty bread, such as ciabatta
- 2 cloves garlic, peeled
- 1/2 tbsp olive oil
Method
- For the topping, combine sardines with tomato, onion, olives and chopped basil.
- Toast bread on both sides until golden. Rub with garlic and brush with oil. Top with sardine mixture and sprinkle with pepper and extra basil leaves to serve.
