Ingredients

  • 8 oz can boneless sardines
  • 4 None medium tomatoes, finely diced
  • 1/2 None small red onion, finely chopped
  • 2 oz pitted kalamata olives, sliced
  • 2 tbsp chopped basil, plus extra leaves to serve
  • 8 slices crusty bread, such as ciabatta
  • 2 cloves garlic, peeled
  • 1/2 tbsp olive oil

Method

  • For the topping, combine sardines with tomato, onion, olives and chopped basil.
  • Toast bread on both sides until golden. Rub with garlic and brush with oil. Top with sardine mixture and sprinkle with pepper and extra basil leaves to serve.
