Ingredients
- 1 lb. firm, ripe tomatoes
- 1/2 lemon, thinly sliced
- 3/4 c. water
- 1 2/3 c. sugar
Method
- Dip tomatoes in boiling water and then in cold water and remove skins.
- Boil lemon with 1/4 cup water for 5 minutes.
- Heat the remaining 1/2 cup water and add sugar; simmer 5 minutes to make a syrup.
- Then add cold tomatoes, lemon and the lemon water and boil until tomatoes are clear and syrup thickens slightly.
- Pour into hot jars and seal.
- Makes 2 to 3 half pint jars.
