Ingredients

  • 5 red very ripe tomatoes
  • 3 scallions, diced
  • Frzn pie crust
  • 1/2 teaspoon basil
  • 1/2 teaspoon chives
  • Salt & pepper
  • Cheddar cheese, shredded
  • Mayonnaise

Method

  • Brown pie crust.
  • Meanwhile, peel and slice tomatoes.
  • Pat each tomato slice with paper towel to absorb all liquid.
  • Layer sliced tomatoes into pie crust.
  • Add in minced scallions, salt, pepper, basil and chives to top of tomato layer.
  • In separate bowl, combine mayonnaise with shredded Cheddar cheese to a thick consistency.
  • Spread cheese mix on pie till entirely covered.
  • Bake at 350 degrees for 20 min or possibly till bubbly.
  • Then broil till golden brown on top.
