Ingredients

  • 1 c. raw rice, cooked
  • 2 eggs
  • 1 Tbsp. olive oil
  • 1 onion, chopped
  • 1 green pepper, chopped
  • 1 clove garlic, chopped
  • 1 (6 oz.) can tomato paste
  • 1 can water or bouillon
  • 1/2 tsp. basil
  • 1/2 tsp. parsley
  • cooked, diced chicken (optional)

Method

  • Heat oil in a large skillet or wok.
  • Saute onion, green pepper and garlic.
  • Stir in eggs and scramble/fry until eggs are set. Stir in rice and cooked chicken.
  • Stir in tomato paste, water (or bouillon), basil and parsley.
  • Simmer a few minutes.
  • Serve hot.
