Ingredients
- 1 c. raw rice, cooked
- 2 eggs
- 1 Tbsp. olive oil
- 1 onion, chopped
- 1 green pepper, chopped
- 1 clove garlic, chopped
- 1 (6 oz.) can tomato paste
- 1 can water or bouillon
- 1/2 tsp. basil
- 1/2 tsp. parsley
- cooked, diced chicken (optional)
Method
- Heat oil in a large skillet or wok.
- Saute onion, green pepper and garlic.
- Stir in eggs and scramble/fry until eggs are set. Stir in rice and cooked chicken.
- Stir in tomato paste, water (or bouillon), basil and parsley.
- Simmer a few minutes.
- Serve hot.
