Ingredients
- 4 ounces uncooked mini farfalle
- 1 cup sliced leek
- 4 teaspoons olive oil
- 2 garlic cloves, minced
- 1 tablespoon lemon juice
- 1 cup quartered cherry tomatoes
- 2 teaspoons minced thyme
- 1/3 cup crumbled feta cheese
Method
- Cook pasta according to package directions; drain.
- Saute leek in olive oil over medium heat 2 minutes. Add minced garlic; saute 30 seconds. Stir in lemon juice, pasta, cherry tomatoes, thyme, and feta cheese; toss.
