Ingredients

  • 3 cups baking mix Bisquick
  • 1 cup shredded cheddar cheese
  • salt to taste
  • 2 eggs lightly beaten
  • 1 cup milk
  • 14 1/2 ounces diced tomatoes with juice

Method

  • Heat oven to 350*.
  • Spray two loaf pans with no-stick spray.
  • Stir together baking mix, cheese and salt in a large bowl; make a well in center of mixture.
  • Add eggs, milk and tomatoes to well.
  • Stir just until dry ingredients are moistened.
  • Divide batter evenly between loaf pans.
  • Bake 350* for 45 minutes, or until wooden toothpick inserted in center comes out clean.
  • Cool in pans 5 minutes.
  • Remove from pans and serve warm.
