- tomatoes
- ground green peppers
- 5 to 6 medium ground onions
- 2 to 3 cayenne or hot peppers
- onion salt
- 2 c. cider vinegar
- 2 Tbsp. allspice (substitutions are cinnamon, nutmeg and cloves)
- 2 tsp. dry mustard
- 2 tsp. cloves
Method
- Fill canner with tomatoes which have been run through the blender; simmer for several hours, removing water as it gathers. Then add peppers, onions and onion salt.
- Mix remaining ingredients together, then add tomatoes and continue to simmer until reduced to about 1/2 the beginning size or until desired thickness is reached.
- Ladle into hot sterilized jars; seal. Makes 4 to 5 quarts.
