Ingredients

  • 4 cups (8 to 10) tomatoes, peeled, cored and chopped, or 4 cup canned whole tomatoes, crushed
  • 2 cups tomato juice
  • 2 cups chicken stock
  • 3/4 cup washed fresh basil leaves
  • 1 cup heavy cream
  • 1 stick of sweet, unsalted butter
  • salt to taste
  • 1/4 teaspoon cracked black pepper

Method

  • Add the peeled crushed tomatoes, the tomato juice the chicken stock and the basil to a pot. Simmer for 35 minutes. Add the cream and the butter and stir until the butter melts.
  • Pour the mixture into a food processor until it reaches the very top of the rim. It is critical that the machine is filled to the rim.
  • Process until the tomato mixture expands, overflows and coats the machine and entire counter.
  • Pour the contents of the food processor back into the pot from a height that is sufficient to ensure that even more soup splashes onto the wall at the back of the stove. Clean the food processor last so that you are fed up by then and hastily put it back in the cabinet before it is entirely clean.
