Ingredients
- 2 lb. tofu (4 cakes)
- 1/2 lb. Mozzarella cheese
- 1 (10 oz.) bag fresh spinach
- 2 c. spaghetti sauce
- 2 eggs
- 3/4 c. seasoned bread crumbs
- olive oil
- herb salt to taste
Method
- Cut the tofu into halves or quarters.
- Beat egg, dip tofu into egg, then into bread crumbs.
- Saute in olive oil until brown on both sides.
- Pour 1/3 of spaghetti sauce into a casserole dish and place breaded tofu on top; set aside.
- Wash spinach well and steam ever so slightly.
- Drain well and place on tofu.
- Cut Mozzarella cheese into cubes and place on top of each piece of tofu.
- Cover with the rest of sauce and bake at 350° for 45 minutes or until bubbly.
- Serve with fettucini, salad and garlic bread.
