Ingredients

  • 2 lb. tofu (4 cakes)
  • 1/2 lb. Mozzarella cheese
  • 1 (10 oz.) bag fresh spinach
  • 2 c. spaghetti sauce
  • 2 eggs
  • 3/4 c. seasoned bread crumbs
  • olive oil
  • herb salt to taste

Method

  • Cut the tofu into halves or quarters.
  • Beat egg, dip tofu into egg, then into bread crumbs.
  • Saute in olive oil until brown on both sides.
  • Pour 1/3 of spaghetti sauce into a casserole dish and place breaded tofu on top; set aside.
  • Wash spinach well and steam ever so slightly.
  • Drain well and place on tofu.
  • Cut Mozzarella cheese into cubes and place on top of each piece of tofu.
  • Cover with the rest of sauce and bake at 350° for 45 minutes or until bubbly.
  • Serve with fettucini, salad and garlic bread.
