Ingredients

  • 2 eggs
  • 2 Tbsp. sugar
  • 8 oz. Mascarpone cheese
  • 3 Tbsp. Marsala wine
  • 1.5 pkg. (10.5 oz.) Savoiardi biscuits
  • 1 pot strong black coffee
  • 2 Tbsp. unsweetened cocoa powder
  • sliced almonds

Method

  • Break the eggs, separating yolks in a bowl and whites in another.
  • Whisk the Mascarpone until smooth, using a wood spoon. (This step may not be necessary as American Mascarpone usually comes smooth.)
  • Whisk the yolks with the sugar, then add the Mascarpone and fold together until you get a homogenous cream. Fold in the brandy and Marsala wine with the cream.
  • Beat the egg whites until stiff and fold them into the cream.
