Ingredients
- any 3 vegetables, zapped in a blender
- 1 finely cut up onion
- 1 can chicken or beef broth
- 3 tsp. butter
- milk or cream (depending upon creaminess desired)
Method
- Lightly saute onion in butter.
- Add broth.
- Add zapped vegetables.
- Cook for about 1/2 hour, stirring often.
- Allow for a boil, about 5 minutes.
- Add milk or cream, depending upon creaminess desired.
- You may also thicken with frozen mashed potatoes instead of milk/cream.
- Serve with a dash of paprika on top of a lemon slice floating on top.
