Ingredients

  • any 3 vegetables, zapped in a blender
  • 1 finely cut up onion
  • 1 can chicken or beef broth
  • 3 tsp. butter
  • milk or cream (depending upon creaminess desired)

Method

  • Lightly saute onion in butter.
  • Add broth.
  • Add zapped vegetables.
  • Cook for about 1/2 hour, stirring often.
  • Allow for a boil, about 5 minutes.
  • Add milk or cream, depending upon creaminess desired.
  • You may also thicken with frozen mashed potatoes instead of milk/cream.
  • Serve with a dash of paprika on top of a lemon slice floating on top.
