- 1 can jalapeno black-eyed peas, drained
- 1 1/2 lb. ground beef or 1 chicken
- 1 onion, chopped
- 2 cloves garlic, minced
- 1 can Ro-Tel tomatoes
- 1 can cream of chicken soup
- 1 can cream of mushroom soup
- 1 can enchilada sauce (medium)
- 16 corn tortillas, cut in eighths
- 2 c. grated Cheddar cheese
Method
- Brown meat, onion and garlic.
- Mix next 4 ingredients into meat.
- Layer meat and sauce and tortillas.
- Add cheese last.
- Cook in oven at 350° for 30 minutes.
