Ingredients

  • 1/4 c. shredded coconut
  • 2 tbsp. minced fresh coriander
  • 2 tbsp. rice wine vinegar
  • 2 teaspoon soy sauce
  • 1 1/2 teaspoon sesame oil
  • 1/2 teaspoon red pepper flakes
  • 1/2 c. peanut oil
  • 1/2 head iceberg lettuce, about 2 c. shredded

Method

  • Peel and core pineapple.
  • Cut it into slices and then into 1/2 inch wedges.
  • Cut shrimp in half down the back.
  • Cut pork into cubes.
  • Combine pineapple, shrimp, pork, peanuts, coconut and coriander in a bowl.
  • Shake vinegar, soy sauce, sesame oil and pepper in a jar.
  • Add in peanut oil and shake again.
  • Pour this dressing over pork mix and toss.
  • Shred lettuce.
  • Put on individual plates and top with pork mix.
