Ingredients
- 1 1/2 to 2 lb. ground beef (depends on fat content)
- 1/2 chopped onion
- 1/2 chopped green pepper (optional)
- 1 can whole kernel corn
- 1 can cream-style corn
- 4 c. mashed potatoes
- 1 can Durkee fried onion rings
Method
- Saute meat, onion and pepper.
- Drain off fat.
- Season to taste.
- Spread evenly in large casserole.
- Drain whole corn and spread over meat; likewise with cream-style corn, then the mashed potatoes.
- Top with the onion rings and heat in oven at 350° for 30 minutes.
- Serve with salad.
