Ingredients
- 1 1/2 lb. medium shrimp
- 1 1/2 lb. Louis Rich smoked turkey sausage, cut in 1/4-inch slices (smoked chicken or pork sausage can be substituted)
- 10 or 12 chicken winglets
- 1 c. rice
- 2 c. water
- 2 (8 oz.) cans tomato sauce
- 1 (16 oz.) can tomatoes
- 2 medium onions, chopped
- salt and pepper to taste
- hot sauce to taste
Method
- In a large saucepan, put chicken winglets, onion, tomatoes, tomato sauce, salt, pepper, hot sauce and water.
- Cook about 45 minutes or until chicken is tender.
- Add sausage, shrimp, rice and okra; add more tomato and water, if needed.
- Cook on slow fire until done.
- (The dish should have the consistency of thick soup.) Serve with crackers.
