Ingredients

  • 1 1/2 lb. medium shrimp
  • 1 1/2 lb. Louis Rich smoked turkey sausage, cut in 1/4-inch slices (smoked chicken or pork sausage can be substituted)
  • 10 or 12 chicken winglets
  • 1 c. rice
  • 2 c. water
  • 2 (8 oz.) cans tomato sauce
  • 1 (16 oz.) can tomatoes
  • 2 medium onions, chopped
  • salt and pepper to taste
  • hot sauce to taste

Method

  • In a large saucepan, put chicken winglets, onion, tomatoes, tomato sauce, salt, pepper, hot sauce and water.
  • Cook about 45 minutes or until chicken is tender.
  • Add sausage, shrimp, rice and okra; add more tomato and water, if needed.
  • Cook on slow fire until done.
  • (The dish should have the consistency of thick soup.) Serve with crackers.
