Ingredients

  • 1 lb. ground beef
  • 3 large onions (3 1/2-inches in diameter), sliced
  • 1 large green pepper, chopped
  • 1 lb. can tomatoes
  • 1/2 c. uncooked regular rice
  • 1 to 2 tsp. chili powder
  • 2 tsp. salt
  • 1/2 tsp. pepper

Method

  • Heat oven to 350°.
  • In a large skillet, cook ground beef until lightly browned.
  • Drain fat. Add onions and green pepper. Cook until onions are tender. Stir in tomatoes, rice, chili powder, salt and pepper.
  • Heat and pour into ungreased 2-quart casserole dish. Cover and bake 1 hour.
  • Serves 4 to 6 people.
