Ingredients
- 1 lb. ground beef
- 3 large onions (3 1/2-inches in diameter), sliced
- 1 large green pepper, chopped
- 1 lb. can tomatoes
- 1/2 c. uncooked regular rice
- 1 to 2 tsp. chili powder
- 2 tsp. salt
- 1/2 tsp. pepper
Method
- Heat oven to 350°.
- In a large skillet, cook ground beef until lightly browned.
- Drain fat. Add onions and green pepper. Cook until onions are tender. Stir in tomatoes, rice, chili powder, salt and pepper.
- Heat and pour into ungreased 2-quart casserole dish. Cover and bake 1 hour.
- Serves 4 to 6 people.
