Ingredients

  • 1 1/2 cups [SUB_RECIPE_LINK {cooked pinto beans, rinsed and drained (see Master Dried Beans)} {153336}]
  • 1 cup chopped red bell pepper
  • 1 cup chopped yellow bell pepper
  • 1/2 cup chopped tomato
  • 1/2 cup chopped poblano chile
  • 1/2 cup chopped red onion
  • 3 tablespoons olive oil
  • 3 tablespoons red wine vinegar
  • 2 tablespoons chopped fresh flat-leaf parsley
  • 2 tablespoons chopped fresh oregano
  • 1/2 teaspoon ground cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 4 ounces multigrain tortilla chips

Method

  • Combine first 6 ingredients in a large bowl. Combine oil and next 6 ingredients (through onion powder) in a bowl. Add oil mixture to bean mixture; toss. Serve with chips.
