- 1 1/2 cups [SUB_RECIPE_LINK {cooked pinto beans, rinsed and drained (see Master Dried Beans)} {153336}]
- 1 cup chopped red bell pepper
- 1 cup chopped yellow bell pepper
- 1/2 cup chopped tomato
- 1/2 cup chopped poblano chile
- 1/2 cup chopped red onion
- 3 tablespoons olive oil
- 3 tablespoons red wine vinegar
- 2 tablespoons chopped fresh flat-leaf parsley
- 2 tablespoons chopped fresh oregano
- 1/2 teaspoon ground cumin
- 1/4 teaspoon garlic powder
- 1/4 teaspoon onion powder
- 4 ounces multigrain tortilla chips
Method
- Combine first 6 ingredients in a large bowl. Combine oil and next 6 ingredients (through onion powder) in a bowl. Add oil mixture to bean mixture; toss. Serve with chips.
