Ingredients
- 1 1/2 c. sugar
- 1/2 c. butter, softened
- 3 eggs
- 1/2 pkg. Angel Flake coconut
- 1 Tbsp. flour
- 1/2 c. buttermilk
- 1 tsp. vanilla extract
- 1 unbaked 9-inch pie shell
Method
- Cream sugar and butter in mixer bowl until light and fluffy. Beat in eggs, one at a time.
- Add coconut and flour; mix well. Add buttermilk and vanilla and mix well.
- Pour into pie shell. Bake at 375° for 30 to 40 minutes or until set.
- Yields 8 servings.
