Ingredients

  • 2 cups onions, Chopped (Large Onion)
  • 1 lb lean ground beef
  • 1 (16 ounce) can kidney beans (Light Red)
  • 1 (16 ounce) can fat-free refried beans (No Fat Traditional)
  • 1 (15 1/2 ounce) can chili beans, Mexican Style
  • 1 (15 1/4 ounce) can whole kernel corn
  • 1 (15 1/4 ounce) can diced tomatoes
  • 1 (14 ounce) can crushed tomatoes
  • 1 (4 1/2 ounce) can diced green chilies
  • 1 12 cups water
  • 1 (1 1/4 ounce) envelope taco seasoning
  • 1 (1 ounce) envelope ranch dressing (Hidden Valley dry seasoning mix)

Method

  • Brown ground beef and chopped onions with Taco Seasoning in a pot.
  • Drain off fat from browned ground beef.
  • Add all other ingredients.
  • If you want the soup more like a chili consistency then drain off the kidney beans, diced tomatoes and whole kernel corn before adding them to the pot.
  • Bring to a boil.
  • Reduce heat and simmer for 20-30 minutes.
