Ingredients
- olive oil
- 2 Tbsp. lemon juice
- 1 drop Tabasco sauce
- 1 c. chopped parsley
- 3/4 c. scallions
- 4 large tomatoes, chopped
- 1/2 c. cracked wheat
- salt to taste
- several fresh mint leaves (optional)
Method
- Cover wheat with boiling water.
- Let sit for 2 hours (quickie: boil the wheat) until all the water is absorbed.
- Mix all ingredients.
- Refrigerate about 1 hour.
