Ingredients
- 1 cup bulgar
- 6 green onions, finely chopped
- 1 medium onion, finely chopped
- 1 pound tomatoes, chopped
- 1 cup chopped parsley
- 1 cup olive oil
- 1/2 cup lemon juice
- 1/8 teaspoon cinnamon
- pinch of nutmeg
- salt and pepper to taste
Method
- Pour enough water over bulgar to cover. Stir to mix well Drain. Let bulgar sit for 1 hour. (Fluff with a fork after 30 minutes).
- Add green onions, onion, parsley, and tomotoes in a bowl and toss.
- Combine lemon juice, oil, cinnamon and nutmeg.
- Add bulgar to veggies and pour lemon/oil mixture over. Salt and pepper to taste
- Refrigerate at least one hour and preferably overnight before serving
