Ingredients

  • 1 cup bulgar
  • 6 green onions, finely chopped
  • 1 medium onion, finely chopped
  • 1 pound tomatoes, chopped
  • 1 cup chopped parsley
  • 1 cup olive oil
  • 1/2 cup lemon juice
  • 1/8 teaspoon cinnamon
  • pinch of nutmeg
  • salt and pepper to taste

Method

  • Pour enough water over bulgar to cover. Stir to mix well Drain. Let bulgar sit for 1 hour. (Fluff with a fork after 30 minutes).
  • Add green onions, onion, parsley, and tomotoes in a bowl and toss.
  • Combine lemon juice, oil, cinnamon and nutmeg.
  • Add bulgar to veggies and pour lemon/oil mixture over. Salt and pepper to taste
  • Refrigerate at least one hour and preferably overnight before serving
