Ingredients

  • 1 c. bulgur wheat
  • 1 c. boiling water
  • 1/4 c. olive oil
  • 1/3 c. lemon juice
  • 1 tsp. salt
  • 1/4 tsp. garlic powder
  • 1/2 tsp. dried oregano leaves
  • 1/2 tsp. basil
  • 1/4 c. green onions, chopped
  • 1 bunch fresh parsley, chopped
  • 1 large tomato, chopped
  • 1 (2 1/4 oz.) can black olives, sliced
  • dash of cayenne pepper

Method

  • In medium bowl, pour boiling water over bulgur wheat.
  • Let sit 1/2 hour.
  • In shaker, combine oil, lemon juice, garlic, salt, oregano, basil and cayenne; shake well.
  • Mix wheat and vegetables well.
  • Pour in oil mixture.
  • Mix well.
  • Chill for several hours. Serve on a bed of lettuce.
  • Yields ten 1/2 cup servings.
