Ingredients

  • 3 egg whites
  • 3 egg yolks
  • 3/4 c. cold water
  • 1 1/4 c. sugar
  • 1 1/2 c. cake flour
  • 1/2 tsp. salt
  • 1 tsp. baking powder
  • 1 tsp. vanilla or lemon

Method

  • Beat egg whites until medium stiff.
  • Drop egg yolks into cold water.
  • Beat until foamy.
  • Add sugar gradually, beating continuously.
  • Sift cake flour, salt and baking powder.
  • Fold sifted mixture into egg yolk and add vanilla or lemon.
  • Stir egg whites and fold in.
  • Use tube pan and bake at 350° for 35 to 45 minutes.
  • Invert when done.
