Ingredients
- 3/4 c. finely chopped onion
- 3 Tbsp. butter
- 5 c. water
- 2 c. yellow cornmeal
- 1 1/3 c. half and half
- 3/4 c. grated Parmesan or Locatelli Romano cheese (divided)
- 1 tsp. salt
- 8 oz. grated Mozzarella cheese (divided)
Method
- Preheat oven to 350°.
- Grease a 13 x 9 x 2-inch baking pan. In a large saucepan, saute onions in butter.
- Add water, bring to boil.
- Gradually add cornmeal, stirring constantly.
- Add half and half, 1/2 cup Parmesan cheese and salt.
- Spread half of cornmeal mixture into pan.
- Sprinkle with more cheese and 1/3 of the Mozzarella.
- Spread rest of cornmeal on top and sprinkle with remaining two cheeses.
- Bake 20 minutes.
- Cut into squares.
