Ingredients

  • 3/4 c. finely chopped onion
  • 3 Tbsp. butter
  • 5 c. water
  • 2 c. yellow cornmeal
  • 1 1/3 c. half and half
  • 3/4 c. grated Parmesan or Locatelli Romano cheese (divided)
  • 1 tsp. salt
  • 8 oz. grated Mozzarella cheese (divided)

Method

  • Preheat oven to 350°.
  • Grease a 13 x 9 x 2-inch baking pan. In a large saucepan, saute onions in butter.
  • Add water, bring to boil.
  • Gradually add cornmeal, stirring constantly.
  • Add half and half, 1/2 cup Parmesan cheese and salt.
  • Spread half of cornmeal mixture into pan.
  • Sprinkle with more cheese and 1/3 of the Mozzarella.
  • Spread rest of cornmeal on top and sprinkle with remaining two cheeses.
  • Bake 20 minutes.
  • Cut into squares.
